I was born two hours up the road in Charlotte, NC, where I started cooking at a seafood restaurant at 15. My love and knowledge of food has grown in the twenty plus years since then, working in restaurants and catering in Charleston, SC, and Galveston, Texas among other places. Along the way I learned that real food, the food that tastes like time and effort went into it, was the food I wanted to cook. My father was an avid fisherman, nurturing my love for seafood, and my mother was a great home cook. My cuisine is inspired by the coastal Carolinas and the American South. The years I spent in the food industry, business school and in culinary school provide me with the experience necessary to provide a great service. Some of the things I love about food are: 1)A love of garlic 2) Making meat fall off the bone 3) Fish from the sea and mountain trout 4)American shrimp 5) Soups, stews, casseroles(Any hearty all-in-one meal) 6) Local ingredients and local food 7) Toasted spices, roasted meats and vegetables 8) All cheese, but White cheddar, Feta, Parmesan and Goat Cheese especially. I'm a family man and upon moving back to South Carolina in 2009 I stayed home and helped raise my two kids with my wife. Being a chef and a stay at home dad meant that dinner was easy. (haha!). No, going to work, raising kids and having very little time to cook means that most families cut corners with a very important thing: Dinner! Takeout, dining out and grocery store prepared food replaces real hearty food. Fast food sometimes too. I prepare food the way it was meant to be made. Made from scratch, my dishes are cooked slowly with love in clients' kitchens and are tailored to each individual families likes. This service is a wonderful opportunity for me to do what I love to do and for you and your family to not do what they do not like to do or don’t have time to do. I believe the portions in most places are out of control and so is calorie counting. I focus on fresh ingredients, local produce and home cooking. I am licensed, insured and ServSafe certified.
